A Village Master of your race and class type adds subclasses. You need the level, a free slot and one of two unlocks.
Requirements

Without Noblesse and without a Star of Destiny, the Village Master will not add a subclass. Most players get the Star first, because the Noblesse quest itself is done on a subclass.
Step 1 — Status of the Beacon Tower (earns the Star)
Talk to Reorin in Oren and accept. You need level 76, and the quest opens in Chronicle 3. Kill four raid bosses in this order. Each one drops its item for you only after the previous one is dead, and the drop is guaranteed.

Take all four to Ferris, the Head Blacksmith in Aden. He gives you 1 Star of Destiny.
Party members on the same step who are close to the kill get the item too. The quest can be repeated.
Step 2 — Add the subclass
Go back to a Village Master, choose Add Subclass and pick a class. The Star of Destiny is not used up, so the same Star also opens your 2nd and 3rd slot.
Other ways to get the Star
Fate's Whisper, which also starts with Reorin, gives a Star of Destiny too. It is a long A-grade weapon quest, so do it for the weapon, not for the Star.
Mimir's Elixir takes your Star of Destiny. Add every subclass you want before you start it, or repeat Status of the Beacon Tower for a new Star.
